Assam’s cuisines are delicious and depict the splendid taste of the
Assamese. The main staple food in the state is rice. Assamese are fond
of rice and fish curries. Fermented ingredients are also used in various
items which add distinct flavor to the dish.
A special item known as pitha is prepared from rice on special occasions.
